When the Azerbaijan Agricultural Institute was established, it was established as the Department of Viticulture and Enology.
One of the first heads of the department was M.A. Khovrenko, considered the "father of Russian winemaking" and the first professor of winemaking in Russia. From 1933 to 1936 he worked as a professor and head of the Department of Viticulture and Enology.
In 1941, it was separated from "Viticulture" and organized as a department of "Technology of winemaking and agricultural products". D.M. Hajiyev was elected the head of the department, associate professor (later doctor, professor, honored scientist of Russia).
In the 30 of the XX century, the associate professor of the department R.A. Mammadov carried out scientific research on "Fundamentals of long-distance transportation of table grapes." Under the guidance of Associate Professor H.A. Atakishiyev, "Determination of the optimal harvesting period of technical grape varieties of Azerbaijan in order to reduce losses and improve product quality", Associate Professor (later Professor) D.M. Hajiyev conducted research on "The impact of oak wood on the quality of cognac." This research was widely used at that time.
In 1953, the departments of "Viticulture" and "Technology of winemaking and agricultural products" were merged into one department. In the following periods, the department was changed several times and during that period the department was headed by N.A. Atakishiyev, A.H. Isgandarov, D.P. Gasimov, Sh.A. Aliyev, J.S Suleymanov. In 1994-2009, the heads of the department were H.K. Fataliyev and F.H. Sharifov.
Since June 2009, 2 departments have been established on the basis of the department. One of them was the department of "Food Engineering and Design". It was formed in 2011 in the form of "Food Engineering and Expertise" after leaving the "Design" department. Since 2009, the department is headed by Doctor of Technical Sciences, Professor H.K. Fataliyev.
The department has a teaching material base. There are food technology and expertise laboratories; processing, storage of products and wine cellar, wine enotex, wine, and cognac samples and tasting hall, etc. available. There are opportunities for the practical implementation of teaching and research work in the basement where micro-winemaking conditions are created.
Conditions are created in the well-equipped classrooms of the department to conduct classes in accordance with modern requirements. Here, students have the opportunity to study using the latest technology.

Department of Food Engineering; Winemaking; Bachelor's and master's degrees in consumer goods examination and marketing are being prepared, and doctors of philosophy and science are being trained in 3309.01 - Food Engineering and 3310.01 - Industrial Technology.
Dozens of copyright certificates, patents, monographs, textbooks and teaching aids have been written and published by the staff of the department. Recommendations reflecting articles and innovations have been published and are being published in scientific publications of the Republic, CIS, Turkey, Portugal, Brazil, and many foreign countries.
The scientific achievements of the scientists of the department are widely used in production. The results of scientific research were presented at conferences and symposiums in Turkey, Russia, Belarus, Ukraine, Moldova, Georgia, France, Germany and other countries.
Recently, under the scientific guidance and advice of Professor H.K. Fataliyev, 10 doctors of philosophy and 1 doctor of sciences were trained at the department. At present, the department supervises the doctoral dissertation on 5 techniques. 3 semi-industrial facilities manufactured at the department have been successfully tested.
Employees of the department are participants of international and regional projects. Prof. HK Fataliyev is one of the winners of the tender held by the World Bank together with the State of Azerbaijan for the establishment of the Ganja Regional Advisory Center, where he worked to provide advice and information services to farmers. His recommendations and methodology are used in farming training.
At the same time, he participated in the project of the German Society for Technical Cooperation (GTZ) "Improving the quality of Azerbaijani wines", and in 2004 under this project, Prof. H.K. Fataliyev took part in the "intervits-interfruct" exhibition held in Stuttgart, Germany.
In recent years, the staff of the department was closely involved in the measures taken to strengthen the cooperation of our country with the International Organization of Viticulture and Enology and the regions of France. A high-level delegation from France and the International Organization of Viticulture and Enology, which came to our country and the city of Ganja, repeatedly visited the department (2011-2013).


Professor H. Fataliyev took part in the talks and events with the Burgundy and Cognac regions as a member of the delegation sent from Azerbaijan to France in 2012. 2 employees of the department (prof. H.K.Fataliyev and Ph.D. M.T.Ismayilov) were members of the organizing committee of the 1st and 2nd International Ganja Wine Festivals and actively participated in the admission of our country as the 45 member of the International Organization of Viticulture and Enology.




The work of the staff of the department was highly appreciated and they were repeatedly awarded. Among them, associate professor S.Kh. Hasanova was awarded the title of "Honored Teacher" by the order of the President of the Republic of Azerbaijan, prof. H.K. Fataliyev was awarded the "Progress" medal.
